KOT Management: 5 Ways to Cut Kitchen Delays in Club and Hotel Restaurants
By DineshKumar D · · 5 min read
The kitchen order ticket (KOT) is the hand-off between your steward and your chef. When it goes wrong, the guest waits — and in a club, the guest is a member who will tell the committee.
1. Route items to the right printer automatically
Map each item to its kitchen section — tandoor, Chinese, bar, dessert — so one order splits into the right tickets without the steward thinking about it.
2. Make modifiers impossible to miss
"Less spicy", "no onion", "Jain" should print large and bold. Free-text modifiers should be the exception, not the rule.
3. Track KOT-to-serve time
If you don't measure it, you can't improve it. A KOT dashboard showing open tickets by age helps your F&B manager step in before a complaint.
4. Control cancellations
Cancelled KOTs after preparation are a leakage point. Require a reason and a supervisor PIN, and review the cancellation report weekly.
5. Let stewards order from the table
Mobile ordering on a phone or tablet sends the KOT the moment the order is taken — no walking back to a terminal.
Apex Didamas POS does all five out of the box. See how it works.
